Greetings Thomas.

Interesting that you should mention the game control setup. I have a
Logitech Rumblepad II, which is modeled after the PS2-type controllers.
This means I have access to two analog sticks, a digital POV-hat, and
approximately 12 programmable buttons.

With this kind of set-up, the POV-Hat could be used to manipulate menus,
the left analog stick for character movement, and the right for saber
control. And since each stick is depressible, the left producing button
11 and the right producing button 12 when depressed, you could program
the left analog stick as follows :
Button 11 + forward: Jump forward.
Button 11 + back: jump backwards.
Button 11 + left/right: Jump left/right, respectively.
Button 11 on its own: Duck/kneal.
Button 12: Saber strike.

You could then set up multiple patterned movements of left and right
sticks, plus the various other buttons to create special saber
techniques, character maneuvers, etc.
I really see the game controller method as the most flexible.

In the case of the star Wars game the saber will be able to be 
controlled by keyboards, joysticks, mice, etc.
