I would be mighty surprised if the same stuffs did not settle down in about the same time, even if not transferred to another container. Of course, if the beer stays in contact with the (primary) sediments, it can take some yasty taste from them. And most of all, if there is a lot of sediment, it is difficult to bottle/keg without stirring some of it up. On the other hand, infection risk increases every time you do something to the beer, and the extra oxygentaion can't be too healthy. Me, this time I am taking the golden middle way. I have three fermenters bubbling, from various stages of the same mash. The weak one got a quick and effective start, and will go straight into a keg (or two, with additional water in one of them, haven't decided yet). The stronger bucket got a slower start, and is now in high krausen. That I will pour into the fermenter emptied above. And the really strong thing may live on in its small (5 liter) bottle for another week, and then I may (or may not) transfer it to a secondary. -H -- Heikki Levanto LSD - Levanto Software Development <[EMAIL PROTECTED]>
