Sure you can use a large bucket to ferment a small amount of beer.
probably it will be good for it. I seem to recall that some breweries
use very flat fermenters too. It should give the beer access to more air
just in the beginning of the fermentation, which is good. As soon as the
magic starts to work, everything will be filled with CO2 anyway.

As to small buckets, I have bought a few of those 1-gallon bottles from
Vinøl hobby. They are practical for small experimental batches - you
really owe it to yourself to divide a batch into 3-4 portions, and
ferment them with different yeasts. Everyone should do that experiment
once, to gain a proper understanding of the importance of the yeast!
