I, too am thinking of filling the outboard hole. I just got the boat, but it seems a little much to have to operate the outboard by opening the locker...and having it slam down on my fingers. I could gain real locker space and have an operational outboard space. Let me know.

Right now I have a custom made rigid outboard bracket. Basically it sticks
out from the stern and allows the engine to mount in the same place as the
cutout does except it is about 16" further aft of the cutout.  As a bracket
it is fine. But I can't reach the tilt/lock lever on my Honda 9.9 (it has
cockpit controls for start/shift/speed, but not tilt).  It is a major pain
and I am thinking of removing this well made bracket and installing a
Garelick 701091 (about $350-400).  My question is, has anyone "plugged" the
outboard hole?  How would I make it secure enough to hold the bracket and
engine?  Any thoughts?
