Yes - you can "generally" do that. In fact, that is what I like to do.
Study, study, study, ensure I am ready - and then book for the following
week and go take it.

Exceptions occur around blueprint changes. For example, the CCIE
Security change is coming in November, so for that exam, I needed to
book well in advance for October in order to guarantee a seat!
