Ray, 

Teach the kid to use the validator as part of your standards.    Let him
know that the first thing you are going to do is run his code through a
validator, so he might want to validate his code first. 

You might point him towards section 508 accessibility standards as
another aspect of your standards.

Take some widget you've built (something that looks simple, but is
really quite complicated) put it up on a site so he can use it but not
see the CF code.  Ask him to reproduce it with his newly acquired
mastery of CF.  


He's confident, not a horrible trait, just needs to be reeled in a
little.  Let him screw something up, then sit down with him and work
through it together showing him other (better) ways of doing it. Then
assign him a task where he can use something you just taught him.
