Even though people think they look great, the graphics quality of consoles
is nowhere near the quality of computers. This is because of a.) console
processor power; and b.) TV resolution.

Modern consoles are only giving you about a 640x480 image. In addition, the
textures and such are extremely optimized (i.e. low quality) to take
advantage of the TV screen's forgiving nature. To give you an example of how
forgiving the TV screen is, here is a jpg that looks absolutely gorgeous on
a TV screen:

Notice that it's a relatively small image, but when shown on a TV screen
it's full size and all the banding and jaggies are smoothed out. The key
thing here is that it's compressed so much that it's only 13K as opposed to
say, 100K or more that it would need to look as good on a PC monitor.

Here's another one that's 5K:

If you look, you'll see tons of banding and blocking, but again it looks
smooth as silk on a TV screen.

That's why consoles can play so well with such low specs. They cut a lot of
corners to do it. Fortunately, the quality appears good enough for people to
still like them. If you were to play exactly the same game with the same
textures and resolution on a PC it would look like crap. So with PC titles,
they have to provide higher quality textures and higher resolutions to make
it look good.

It will be interesting though to see how well XBox games work when people
hook them to HD displays. I know that Metal Gear 2 for XBox has some serious
framerate issues at times.
