Not necessarily, you can use ISL to carry all three VLANs across a single
link.

You can also use an RSM in Cat5xxx and do the routing directly on the switch
via virtual router interfaces.

To answer your other questions, your default gateway is whatever IP address
in each subnet that you want it to be (most people use the first assignable
address in the subnet).  You configure your DHCP server, or you manually
configure your clients to point to it.  Hosts will know that if they want to
reach another PC on another subnet, they have to go through their default
gateway (you should research the ARP process).

My question is this though, with only 30 hosts per floor, do you really need
to seperate them off into seperate subnets?  Is there some sort of security
requirement that you are dealing with?  Why not just leave them in one
subnet?

break it down into 3 subnets. Routing between subnets will be done by the

automatically.
