OK, I have to respond to this thread, speaking as a Cisco instructor.

Understand that all the training partners ship their equipment to the next
location. If the instructor is very lucky, the equipment will be
remaining in the same location for the next week's class, but that is more
the exception than the rule. Instructors are obligated to get the
equipment packed up NEATLY so it will arrive in such a way that the
instructor receiving it for the next class can unpack it efficiently and
get it set up with a minimum of trouble. This actually was once a part of
the qualification lab for CCSI's, and was worth enough points that you'd
want to get it right. It does take time to pack the equipment--at least
an hour, usually more, depending on how many cables and other assorted
components there are (each one must be coiled neatly, of course), and how
ornery and beat-up the latches and locks on the cases happen to be. All
must get done before the frieght forwarder arrives to pick it up, usually
between 4 and 6 p.m. on Friday. Instructors are not in control of this
time. When I teach a week-long class I plan to wrap up the presentation
around 2:30 - 3:00 Friday afternoon. Any class you take will likely end
at a similar time, and would not be considered "cut short."

Managing time is a huge challenge for the instructor. It's difficult to
ask all students to stay later than the advertised ending time of the
class. One factor is logistics on their part (traffic, baby-sitters,
train schedules, etc.), another is just the buffer overload that happens
when the course is full of technical material. I teach BSCN, which is a
new course, and many instructors (myself included) are still trying to
find the best way to manage the classroom and lab time. Feedback from my
students indicates they'd rather not have me fly through the
presentations, but like the fact I ask questions and pause occasionally to
let the important points sink in. Labs run longer than the anticipated
time, simply because there's a lot to do and see in them--I definitely
don't want to cut those short for too many of the students. By about 3
p.m. I can see in their eyes that their ability to absorb additional
knowledge is extremely limited, so keeping everyone late is a bad idea for
that reason. I always encourage students to stay after the class ends in
the evening to discuss any topics they would like or to experiment with
the routers, but few take advantage of that. So it's a big challenge for
the instructor.

I always like to see comments about what students would like to see in
terms of how the classes are managed. I imagine the instructor in
question had a very good reason for scheduling an early flight, and should
have let you know what to expect the first day of class.
