This must have been asked a zillion times, but is there a faq
somewhere with a preferred lab kit list?

Oh, boy, an opportunity for comment.  OK, here goes:

Kidding!  Kidding!    You need more routers, at least two with ISDN,
and
possibly token ring (and MAU).  I would also look at getting an ISDN
simulator... I bit that bullet recently, and the cheapest ISDN
simulator I
found was $1685.   I'd sell the 2924 and get parts for the 5005. 
Don't blow
too much money on a console server:  get a CS-516.
