Danny — unless you’re anchoring deep or in tropical waters (read: coral) all the time, I would think 90 feet of chain (over two boat lengths) would work for your type of sailing. This would easily give you a 5:1 scope in fifteen feet of water without going onto the rope rode. And the size and type of chain should be fine.
