Jessica, remember that this takes practice. Just because it doesn't work well now doesn't mean that you won't get better. It's true, sometimes those things will happen, but it's okay. Keep trying, and above all, try to be patient with yourself. This is something you're doing for yourself, and what other people think is not the most important thing. How you do a thing is not as important as that you do it.

If you are cutting it for some one else, such as a young child, you may need the help of a very clean finger to touch the edge of the food and guide you to where to make the next cut. Using a fork to hold the food in place also keeps it from sliding all over the plate.
