That's okay. Then, as Alex described, you simply locate the food again with the knife and fork and make your next cut. I have a hunch you're not doing nearly as badly as you think. If, as he says, you can find a friend to work with, one who will not only be honest but who also will not be critical, I think you'll do just fine. If that friend is also a blind person, that's even better!
