I can’t really say. A lot of it depends on the size of the potatoes, how many 
I’m cooking for, do I want left overs & what I plan to do with the left overs.

For two with leftovers, I might cook 4/5 medium potatoes & use only 1/2 stick 
of butter.

Some times I will use the leftover potatoes to make potato salad to go with a 
different meal later in the week. To do that, I just add a bit of mustard, 
sweet relish & chopped egg & now I have a different side & it took very little 
effort.

I hope I answered your question. When cooking, I hardly measure anything.

How many potatoes do you use? The mayo sounds like a good alternative,
and I'll remember that for when I'm out of milk.
