These are really very distinct operations. Orientation is just that - 
determining whether this is a "landscape" or "portrait" orientation of the 
sensor data. Most modern cameras detect and include this information in images, 
and darktable will use this information when present, but every once in a while 
you need to manually change this. When this is the case for several images, 
it's generally easier to do it by selecting them in lighttable view and hitting 
the button once. Fine rotation is just that - getting horizons level, etc... 
unlike orientation, it always implies some cropping, so it's combined with the 
cropping module.

Everyone has a different definition of "almost everything". Have you tried 
adding the modules you find most important to your workflow to the "favorites" 
group?

Darktable also allows for a large amount of custom automation based on camera, 
lens, ISO, etc... getting this set up the way you want it can greatly enhance 
workflow.
