INTHEWILD.md is as close to a standard as it gets for this. I'd advocate to move the list there and have a link to it in the README. Here's the Superset one for reference: https://github.com/apache/incubator-superset/blob/master/INTHEWILD.md
Personally I like a short clean README with links to key richer resources. Side note: I also think images are worth thousands of words and should be prominent! I do think that this list is extremely valuable as it adds a lot of credibility and gravity to the project. I'd recommend using the event of the move to invite people to consider adding their organization to the list. It's the absolute highest value to effort ratio one can do to help an open source project. I think it's fair to do a *kind call to action* following the move and periodically (every ~6 months?).
