I'd never done it before but I couldn't believe it wasn't possible, so
I just poked around and was able to bind ctrl-shift-o to the degree
symbol.
I used Tools > Macro > Record macro; recorded inserting the character;
saved the new macro; then did Tools > Customize > Keyboard, under
Category selected OpenOffice.org macros > User > Standard > Module1,
under Function selected my new macro, then selected a shortcut key and
clicked on Modify. Maybe not the most obvious mechanism, but
definitely possible.
