I will tell you how they do.
Actually, I think many of them DO have a concept of dispersion ... even at 3rd grade ... they know some students are smart ... some not so smart ... some can run fast ... some not so fast ... some talk a lot (and get in trouble) while others don't
I don't have any feel for if they have any notion of "average" ...
