I'd guess mail has really freaked out somehow. I didn't even know
you could SET encoding options in Mail.app.
Strange behaviour. I made a few tests and it seems Mail adapts the
charset the the content of the message. If I have only ASCII
characters it sends it as US-ASCII. If I add an Ö it sends ISO-8859-1.
If I start using “” it chages to Windows-Latin-1 and if I put
characters that can't be represented in any of those encodings, like
, it becomes UTF-8. Not bad I reckon.
However, it sometimes sends it in quoted-printable and sometimes in
base64. For example, a single Ö as the message body became base64 but
an Ö in the middle of an otherwise ASCII message led to quoted-
printable.
Go figure.
