Tannis,
I do recognize exactly what you are describing here.

(1) So, either you indeed received 2 copies. You would see 2 addresses
in the TO/CC section of the long mail headers. Or you would see ONE and
"undisclosed recipients".

For example, many people do a reply on this list which would in this case
return to my mail-address, and then they add the list-address, which
would result in me receiving 2 messages.

(2) BUT, there is another possibility,
Your ISP's (specifically after a weekend) sometimes take a server offline
for a software update.
At that time the queue of messages is stopped, and another server takes
over.

When the first server resumes its work, it quite often happens that a
series of mail messages arrive 2 or 3 times. That happens to me, and
happened even prior to Mac OS 10.4.

(2) FINALLY, a third thing can happen, which was discussed earlier. I am
tied into some 10 ISP's at least, and I know of at least 2 ISP's where
the "Leave mail on server" causes this to happen. Because accessing the
same mailbox with 2 or more client programs, for some reason messes up
the pointer indicating precisely up-to-which message the mail was read.

At that time, Chris confirmed that all of the pointer-keeping, is being
done on the client-side.
And I am assuming that some clients mess up their own pointer as soon as
they see a message they referred to in the queue, being deleted right
from under their feet.. if that expression is a bit of English worthy.
