They may specifically use a field iron that has a much higher remanent 
flux than would usually
be used.  This would not likely affect any other parameter of the motor, 
the field winding would
easily override the iron in powered operation.

If this IS the key, then there is no way to make a motor self-brake.  
You could mod it to
bring out the field and armature wires separately, and rig a supply to 
the field and short the
armature.  That becomes a lot of work, though.
