I did something like this for a homebrew (beer) mash temperature controller
using an arduino tiny.
I lifted the PID software out of one of the 3d printer control softwares,
and wrote a time/temperature control routine.  It also included alarms for
overtemp/undertemp, and master kill.

Very easy, Very reliable.
