You can still use the Edit Lyrics window if you like. Just be sure to enter
them in a separate verse, set to the same font and baseline.  The problem
you encountered comes from trying to insert into a verse that is already
set, which will generally cause undesired results unless you really know
what you're doing.

Your instincts are good, in wanting to click assign your lyrics all at
once, rather than in a hodgepodge and disorganized way.  Just remember that
any time you need to go back and add a new batch of lyrics, put them in an
empty verse.  If you put them into a verse that is already occupied, you
might disturb the earlier lyrics in that verse; if you put them into a new
verse, the old ones will be left alone. (Actually, you're usually safe
adding them to an existing verse so long as you're sure to add them only to
the end of the list; but it's safer still to use a fresh verse.)

I don't even know what the limit on number of verses is, but it's far far
more than anyone would ever need for real verses.  I frequently make use of
multiple verses to keep my lyric syllables under control, even when it's
really just one verse in the song.
