Hal,

You could just modify your second solution: create the chord on one staff,
cross-staff the other hand's notes, hide the stem with a blank Custom Stem,
and create a Smart Line to put in your own stem on each hand's chord.  That
way you wouldn't have to fuss with "stem white-out."

I haven't tried this... let me know if it works out to your satisfaction.
