If you really want a stand alone HTPC machine, Freevo should really run the mencoder process. I imagine setting the process at a low priority should allow you to still do other things (watch TV, listen to music) while it's encoding.
If it takes up too much processing time, you could always schedule the rip to happen at off hours, say 2am.
