Thanks to everyone for their insightful thoughts. I have decided to go the pro route and get the G5's instead of more lower performance models. Even if the performance gap is not that dramatic or we could get by on non-pro models, in the near future the dual processors and 64 bit processing the G5's offer will leap the performance gap when software is optimized.
