In spite of what Apple & some dealers claim, will it recognise 3 x 256Mb
sticks as 768Mb, or will it still claim there's only 384?

768 MB is the max.

If it will recognise it, I would look for PC100 as it's everywhere & cheap,
but are there any caveats anyone on the list has discovered?

You may use PC66, PC100, PC133 or PC150.

Stay away from sticks with only 8 chips.

Example: 256 MB, 8 chip stick will most likely be recognized as a 128 MB
stick.
