In version 8.2.1 setting the default font is under "Editor Defaults". (mine shows the original setting: Monaco-9, 4 spaces per tab.)

Another point about BBEdit, when you have a lot of old files, is that it will
still open them in the old font size, unless you have the State preferences
changed to *not* "Honor Saved State" with regard to "Font Settings" -- then it
will open the files at the size specified as default.

(At least that's the way it works in 5.11, the version I have. They may have
changed the exact wording.)
