You will need to prepare by expanding your stomach. I recommend a solid week of 1 - 12 pack per evening to get things going in the right direction.

John Stage from Dino BBQ in NY has a pretty good rep, and I've seen Mike Mills in those Food Network shows where they go to BBQ competitions around the country.
