I've successfully done remote OS switches from preinstalled redhat to gentoo, 
by making a gentoo root partition (actually I had to use redhats swap), 
mounting it and bindmounting dev/proc, untarring a stage3 then a chroot to 
the partition followed by full setup and emerge of whatever I needed. 

There's really not much difference in between chrooting from an OS booted off 
gentoo boot CD, and chrooting from an OS booted off your harddisk.
