Jocking aside, I am not sure you wouold get the JNI bindings this way. Look around for an so like libgdaljni.so or similar. Moreover, i would check the geoserver log to see if you can find a message (at the top, after start up) saying something about gdal (it should complain about not finding the JNI bindings).
