Well, on the bright side thanks to Adrian work we now have a good legal
standing and we are in a position to change the license at will, as
far as I know the PSC just have to ask OSGEO to do so (provided the
license we choose to switch to is still open source).

I personally would be ok with adding a "any later version", but I
would feel more comfortable with just switching explicitly to v3
(provided v3 does not have other significant changes I'm not aware
of, haven't really read it, just read articles talking about it).

The rationale is, what if LGPL v4 contains changes that we don't
agree with? Saying any later version is kind of accepting the
unknown...
