I think, sauf votre respect, that I cannot not include the space in
"my" gabc files reproducing scores extracted from these books...
I disagree, for me the spaces should be automatically added by TeX if
you want them, having them in the gabc makes someone wishing to reuse
your gabc have to remove the spaces...

So, to sum up:

- with spaces in gabc:
   * other people cannot use your gabc if they don't want to add these spaces
   * you still have to use the automatic spaces in your TeX file for the
text outside the score

- with no space in gabc
   * you just use the same spacing as your main TeX file (which can use
them or not according to the style you want)
   * other people can reuse your gabc file

So, I really see 0 reason to add the spaces in the gabc file... unless I
miss something?
Well, I am not sure.
But I think we mix many problems.
- my initial question : are there "standard" latin typographic rules ?
- the point is not so much gregorio than gregobase.
- fidelity to the original. Does fidelity goes to typographic rules. I think yes. If we quit the original source, there is no limit. - A user may want to use the typographic use of her country in her main text and keep the original typographic way in the score.

A proposal : create gabc with respect of the typographic space of the original source, and add a gregoriotex macro which will add or remove the space to conform to non "standard" (I want to say non solemnensis or other source way) typogaphic use.
