Interesting thing is if I remove the HD and put it into a FW case, I
can start up my own iMac G4 from it, and retrieve the mail correctly.
Seems no matter what I do, it just won't work when it's in this older
G3 model.

One thing comes to mind. In the various Library folders is often a folder entitled "ByHost". It contains configuration files that have a machines MAC address in the filename. When a given program needs one of these files the file with the MAC address matching the computer's MAC address (of the built in wired Ethernet port) is used. Thus a given HD may have one, two, three or more configuration files where the choice of file is based on the the machine. So this is one way that software can behave differently depending on the machine.

From browsing these files most do seem to make sense that they are hardware dependent but some I'm not so sure of. It's possible of course that I've misinterpreted these files or that they only need to be machine specific for certain cases.

In any event, I'd suggest a search for "ByHost" then take a look at the files. One possibility is to save all the files in another folder then startup on the problematic machine and see what happens. You will likely need to reset some of the preferences these files hold.
