I know of one that was made way back when, and apparently it only goes as far as Jaguar. If I remember correctly it is a Kaleidoscope theme called "Aquamakeover" and since Apple cracked down on unauthorized use of the Aqua appearance it is very hard to find nowadays. When combined with A-Dock, an implementation of the OS X dock for OS 8 and OS 9, it actually provides a somewhat convincing appearance (a few years ago I was able to fool a couple of classmates into thinking I was running Leopard on a 1995 PowerBook 5300ce, though not for long). I'm not sure where you could find it though.
