What if you found out the ISP that they use, then simply CNAME their
'smtp.domain.com' domain name to their ISP's mail server A record, then
setup the A record for their 'pop.domain.com' to your IMAIL server. Then
just have them use
'smtp.domain.com' for their outgoing mailserver and 'pop.domain.com' as
their incoming mail server. I currently have all of my domains set to use
this scheme, but for now they're all pointing to the same machine :-P
I did this so I could break the outbound out to a virus scanning server
later on.

I have had this debate with my partner system
administrator. I believe this is a
    "school of thought" situation.

I know users that would find this change to be
    over their heads.

You, the Imail provider, may be expected to find
the information from their dial-up provider and
    explain it to the user.

For most Imail providers it is just plain easier to
give the user a locally controlled, locally named
    SMTP server name.
