so what is the consensus here with imail anti-spam? I keep getting "turn off spam filtering" as my "solution"? Is there a stable version?

The reason for this is that a small percentage of IMail users have reported crashes in the SMTPD32.exe process, that are related to anti-spam. I believe only 3 people have reported this problem here (others may have reported the same problem, though, but without enough information to be certain it is the same issue). So given your problem, there is a known workaround, but there is no solution yet.

The IMail v8 anti-spam in the latest version of IMail is stable for most people.

Does anyone know of any additional logging flags to enable in imail to help determine exactly what in the anti-spam process is killing our smtp server? All I see in my log is " performing spam check... or similar" and the next message indicates that the smtp process is restarting. Perhaps I am looking in the wrong place and it is not anti-spam at all, but without more details, I am at a loss for what to do next...

It's not your issue; it's an IMail issue. This is a flaw in IMail that you are encountering. You'll need to send the details to Ipswitch tech support. They should be able to determine exactly in the code where the problem occurs from the information you submit.
