What I typically do is:
1.   set the MX record TTLs very low a few days before the move for each domain that 
you are going to move.
2.   Perform the tasks outlined in the KB article you referenced
3.  Change the MX records and reload the zone
4.  Add an entry in the OLD machines 'hosts' file (typically 
c:\winnt\system32\drivers\etc\hosts' such as:
<ip_address_of_new_domain_mx>  moveddomain.com
5.  Remove the OLD instance of mail for the doamin on the old machine.

What #4 is going to do is ensure that any lingering emails coming into the old machine 
for the moved domain will be immediately shipped to the new MX for the moved domain.

Then after all of the domains have been moved over and you've waited a few days you 
can go in and remove the entries from the hosts file on the old mail machine.

NOTE:  You do NOT have to have MX records pointing to both the old and new machine 
during this transition - and my feeling would be that you wouldn't want to period.   
Just set up the new mail, change the MX to point to the new machine IP, add an entry 
in the old machine's hostfile to redirect mail for the old domain to the new IP, and 
remove the old instance of mail on the old machine.   It actually can be done pretty 
quick and you won't lose mail nor will you have mail building up in old POP3 mailboxes 
on the old machine during the dns propogation time.

As far as your clients go, you are likely going to have a few support calls regarding 
their inability to log in via pop3 or smtp authenticate -- mostly because they are 
likely running Windows and need to do an 'ipconfig /flushdns' locally or need to 
reboot their system (or need to have their network admin flush their local dns cache). 
 It probably would be best ot notify them ahead of time and let them know that if they 
encounter problems on such-and-such date (your move date) then 'do these things first' 
before calling :)

I want to be able to move the main domain on one Imail server to become 
a virtual domain on another.

I am planning on following the instructions on 
http://support.ipswitch.com/kb/IM-20000510-DM02.htm, but am wondering 
if there is anything else to watch out for.

I will be moving about a dozen domains from one server to another and 
will also be changing the DNS servers.  I would also appreciate any 
pointers on the best approach for swapping over the DNS info in order 
to minimise mail disruption.
