You're close. The word is usually used in the forms of "sureta"
and "surete(i)ru" to describe a person who has become too accustomed
to the ways of the world and lost his/her childlike innocence.
There is also a related noun for such a person or the sate of being
one--"sure(k)karashi" and another word for such a woman/girl--
"abazure". You'll find "abazure" in an English-to-Japanese
dictionary under the entry of "bitch".
"Sureru" is never used as a potential form of "suru" (do); one
uses "dekiru" instead.
By the way, when you ask about the meaning or the usage of a
particular word/expression, you should be more specific, giving the
whole sentence you came across, so that others can understand what
you really want to know. When I first read your question, I wasn't
sure which "sureru" you were talking about.
