You are targeting normal users. As Peter said, jabber.org will still explain the possibilities of running your own server, but this will interest only a very small part of the potential Jabber(.org) users. All the other users don't care about this choice (they don't on MSN, they don't on Skype, they don't on anything). The 'advanced' users will look further to see how they can set up their own server behind their corporation firewall, ...
