64 bit is the way to go, esp. with that amount of ram. Download the 64 bit alternate CD, just follow this tutorial: https://help.ubuntu.com/community/UbuntuLTSP/LTSPQuickInstall I guess your clients will be mostly 32 bit. I'm not sure how clever the installer is, but you will probably need an additional sudo ltsp-build-client --arch i386 to make your 32 bit clients work.
