I turned off all the energy saver options, and that seems to have cured it up to a point - i.e. I can use it for hours without any issues. It's when I leave it unattended for a while (when installing stuff) that it seems to happen. This is why I assumed power saving was causing an issue. To be honest, it could be RAM or IDE cables, or overheating. It's all a bit random and didn't happen under Classic (8.6) I just fiddled a bit with it over lunch and am none the wiser. Still playing up. I think the drive may be overheating. I might try it with a fresh 10.2 install on a single drive system with a CDRW on the second IDE Stream.... It has to be something to do with overheating because the second drive was only put in to install OSX on, and I think that is the most likely cause having skimmed some websites this afternoon.
