Carbs with good atomisation at low air flow, e.g. SUs are particularily prone 
to running on. So much so, that the 180b SSS flat tops include from the 
factory a solenoid and air plumbing to stop it.

This plumbing is NOT (as most people imagine) emissions gear. Its function is 
purely 100% to stop running on.

The solenoid is closed when the ignition is on, but when the ignition is 
turned off, the solenoid opens which dumps loads of air into the intake 
manifolds, which leans the mixture beyond the point of combustion.

You could add this (or a similar) system to your setup.  Not nice 
aestheitically, but it works.

Or go EFI, which entirely bypasses this problem.
