I remember when our residential stove had a pilot light & now some commercial stoves no longer have pilot lights.
Seriously, commercial stoves have huge venting requirements for a reason. They put out a lot more BTUs but even more important they burn a lot more gas. They need a huge vent and just as much make-up air. Don't provide enough makeup air and the stove starts spewing out carbon monoxide. Set one up in a modern air tight house and they might find you one morning, dead, from carbon monoxide poisoning.
