True but the engine of a serious automaker's car should be made by the
automaker itself. Mercedes is not hurting and it is fully capable of making
perfectly capable engines. So why Nissan? Cost cutting of course.
Low production niche vehicles made by small scale manufacturers can get away
with using other engines but not Mercedes.

Exactly! In fact, very little was/is actually made by Mercedes. Perhaps
some sheet metal work, but even that is made by some suppliers at this
point I'd expect. They design and specify the parts, then put it all
together. But, a large amount of the parts still do come from Germany.
Especially in the higher models. Daimler ensures this by choosing
suppliers accordingly.

And this isn't just how Mercedes works... this is how the auto industry
works. There are thousands of companies with specialities in each part of
the car. I work for one of them. We supply parts to Mercedes, BMW, and
Porsche as well as Chrysler and Toyota. This doesn't mean we provide the
same parts to Toyota as Mercedes, but we have the experience to make the
best product possible given the manufactures specifications and cost
requirement.

Our 20-40 year old Mercedes are not all made by Mercedes (DBAG at the time)
The injection was made by Bosch, as were wipers, lights and many other
components.
The radiator and heater were made by Behr
The glass was made by Sekurit
All the rubber bits were made by someone else, maybe Metzler
The MBTex, dash pads, door liners were made by another company, perhaps
also Metzler
Brakes were made by ATE or Bendix
Engine?
Pistons made by Mahle
Rings made by someone else, perhaps Mahle
Water pump made by someone else
Clutch and pressure plate: F&S (fitchel & Sachs or something like that)
Transmissions made by Getrag
I am sure there are more examples, that don't come to mind as the schnee
blows and my MB are tucked away for the winter.
The difference is that 60 to 20 years ago, most, if not all the component
manufacturers/designers were companies from Germany or at least German
speaking countries.
