Yes, Victorinox...I forgot to mention my fairly new Victorinox chef's knife.
A very high quality low-cost knife.

We have a set of R.H. Forschner Co. Victorinox, including an 8" slicing
knife, a 6" boning knife, and a 10" chefs knife, among others. They are
wood-handled with three rivets in the handles. I bought them in the early
80s, so they are 30+ years old now. I really like the 10" chef's knife.

For paring knife duty, we have three Victorinox plastic-handled knives with
3" blades I got off eBay. Plus an assortment of cheap knives.

For keeping them sharp, we have a 12" ---> FDICK steel.
