It is my understanding that parcels insured UP TO $50.00, do NOT require a signature for delivery.  Only those parcels insured for OVER $50.00 (blue receipt slip) require a signature.  (Although frequently, carriers deliver the over $50.00 insured parcels without getting a signature).
The difference in cost between Media Mail and Priority Mail is never much more than a couple of dollars, anyway. And the service of Priority Mail is so far beyond Medial Mail that it's hard to even measure.  It's just not worth the few bucks you save to use Media Mail and take the risk.
The difference in cost depends how much the parcel weighs and how far it is being shipped.  To ship a 60 pound parcel from NYC (10021) to LA (90068) cost $105.10 by priority mail, but only $19.84 by media mail (a savings of $85.26).  My experience with media mail has always been very satisfactory, and media mail parcels can be insured for full value.
