Well, it looks like I may have spoken too early about that actually working. When the source video file is 16:9 that works fine; when it's a 4:3 file though, it stretches it horizontally to fill a 16:9 screen (whereas I'd want it to be letterboxed with bars on the side).
Any ideas? Unfortunately I can't really do any more testing here because that computer's packed up... Another VLC question: pause doesn't seem to work reliably (if a video is left on pause for too long, it fails to come out of pause correctly). Is this a known bug?
