Can't say if this will work - I haven't tried vlc yet (I'm still trying
to get mythtv working properly), but have you tried this option?
--sout-transcode-canvas-aspect <string>
Video canvas aspect ratio
This sets aspect (like 4:3) of the video
canvas and letterbox the video accordingly.
