I've never used Access, except briefly at Uni for my coursework, so I really 
know little about it, and may have been quite inaccurate in trying to equate 
the two.

Yes, separate tables are stored, and Approach handles the joining into a 
relational database, together with all enquiries, etc.  When Milos suggested 
PostgreSQL with pgaccess as a front-end, I took a look at that on the web.  
It looks as though it would work quite well.

I first built databases in Masterfile, a DOS application, if any of you 
remember it (it was flat file in early releases, but developed into a 
powerful program), then later in Approach.  I did a little SQL at Uni.  So 
between them I feel quite confident in learning another way of doing things.  
It's just a matter of devoting enough time, I think.

And these long winter days might be a good time to do it.
